Take a knife and remove membrane (thin layer of skin)on the back of the rib rack. Trim any excess fat.

Mix all ingredients for rib rub and liberally rub on to top of rack of ribs (for best results do steps 1&2 wrap in plastic wrap and keep in fridge over night)

Soak hickory blocks in water for 2 hrs

Place logs in smoke pit and lite. After wood starts to break down place 2 to 3 soaked hickory blocks on top of oak logs to create smoke.

Temperature needs to be around 225 degrees. ( if to hot open lid on grill until you hit desired temp) ( if not hot enough, add more logs and soaked hickory blocks)

Once desired temp had been hit, place rack of ribs on the grill. Leave on rack for 3 hours.

Spray ribs liberally with apple juice every 30 to 45 minutes. (do not leave lid open to long or crucial heat will be lost)

After 3 hours remove ribs and wrap in foil and place back in pit for 1 hour.

After hour in foil remove from foil and glaze with a sweet BBQ sauce of your choosing (my sauce recipe is a secret) place ribs back on the grill and leave on for 1 more final hour.

Remove and from grill and sit on serving tray and cover with foil for 10 minutes.
