Mushrooms sauce with a touch of Sake kasu;)

材料・調味料 (9 人分)
Olive oil
5tbs
Unsalted butter
4tbs
Sake kasu
20g
Medium onions chopped
2pcs
Mushrooms any kind sliced
800g
Plain yoghurt at room temperature
1 1/2cup
White wine
1/4cup
Lemon juice
3-5 tbs
Parsley chopped
2tbs
Mustard powder
1/2tsp
Salt
1tsp
Fresh ground black pepper

作り方

Melt the butter in olive oil in a large saucepan over medium heat. Add the onions and cook for 5min until the are translucent. Stir in the mushrooms, add the white wine and sake kasu, cover with a lid, and cook for 10min or until the mushrooms are reduced but still slightly plump.

Take the pan off the stove and remove the lid. Stir in the yoghurt, then stir in the lemon juice, parsley, mustard and salt. Return the pan to the stove. Reduce the heat to medium-low and simmer the sauce without boiling, stirring occasionally, for at least 30min. or longer if you want a thicker sauce. Before serving, add fresh ground black pepper to taste and stir.
ポイント

Use yoghurt at room temperature to avoid curdling. Cold yoghurt curdles in response to abrupt changes in temperature.
