Love '和醸良麵''s カレーつけ麺 at Kyoto,here is my trail,making the タレ from scratch,using aromatic vegetables,spices,fruit,昆布,厚削混合節 etc,very happy with the result,I think curry タレ is much easier and simpler than the original which is made with all those bones. Everything else is homemade apart from the noodle,which I bought in noodle shop,labelled as 福建麵,not exactly the same,but close enough while I am in HK!
