Miso soup

材料・調味料 (4 人分)
Enoki
200g
Shiitake
4 whole
Daikon
1/2
Dried wakame
1tbs
Soup stock
1/3 cup
Miso paste
4tbs
Low in sodium soy sauce
2tbs
Tofu
500g
Green onion
1/2 cup
作り方

In a bowl, rehydrate the wakame in cold water. Cut up the daikon in 1/4" slices and parboil.

Add 1/3 cup of soup stock. Turn settings down to low and allow to simmer for 5 minutes.

Add shiitake and enoki. Let it simmer for 5 minutes. Add 1tbs of soy sauce.

Add rehydrated wakame and stir. Add diced tofu.

Add 4tbs of miso paste. Stir lightly and serve immediately.

Add chopped green onion on top as garnish.
ポイント

Use low in sodium soy sauce to avoid over saltiness due to the wakame and miso.

Miso quickly loses it's flavour so keep it as the last ingredient and serve the soup as soon as it is added.
