That's awesome creation,you have capture led the essence of SE Asian food,those herbs you used make such beautiful aroma,with the banana leaf,that's extra delicious,and keep fish nice and moist,I think it's very clever way cooking it! So good to see you leaf getting big,next time please try roasting it on flames,like charcoal or fish grill,banana leaf is best giving aroma like that as my experience tells me!
Good morning Rick. I enjoyed this food! When I saw your fish and chicken wapped banana leaves, I came up with Asian cooking. Then I have one question, you used oven or flypan? I grilled surface of fish on flypan, next wapped with leaves, and to oven. Please tell me how to cook your banana dishes.

From the way SE Asians do it,and also my experience,banana leaf wrapping food is best roasted on charcoal or grill,banana leaf needs to go dark and burnt to release the aroma.The chicken I did was done in oven,whole chicken takes time to cook through,still banana leaf aroma is weak(The video I saw,the people put the package inside the charcoal!).The fish package was roasted on fish grill put right on the stove.No need to precook,fish is easily cook though. I have no reference about timing,it's all experience,I test my doneness of food with a metal skewer,and test on the lip,a technique we do at professional kitchen.If you are interested to know,just let me know.

鱈の切り身をグリーンカレーのペーストやココナッツ、クミンなどでマリネしておき、バナナリーフで包んでオーブン焼き。美味しい♡

まさかバナナを育てることになるとは思ってもいなかったけど、仕事で知り合った人が農業マニアの若者でさ〜✨
バナナを3種類くらい栽培していて、株分けしたものを持ってきてくれたの(会社に😂)
貰い物のバナナの苗を鉢植えで育てているところです。実がなるのを楽しみにしていますが、ま〜だまだだと思います(笑)

まだ高さ1メートルにもならないサイズなのですが、日々、新しい葉が出てきます。特大の葉が出たらビッグサイズのバナナリーフ料理を作ります( ̄^ ̄)ゞ
