Mixed berries and white chocolate muffins

材料・調味料
Self-raising flour
1 cup
Wholemeal self-raising flour
1 cup
Brown sugar
1/2 cups
Egg, beaten lightly
1
Butter milk
1 cup
Rice bran oil
1/3 cups
Frozen mixed berries
1 cup
White chocolate chips
1/2 cups
作り方

Preheat oven to 180C and grease a muffin pan.

Sift flours and brown sugar into a mixing bowl and make a well.

Mix egg, buttermilk and oil together then add to dry ingredients and stir until just combined.

Gently fold through frozen mixed berries and white choc chips.

Spoon mixture into prepared muffin pans.

Bake for approximately 25 minutes or until golden and muffin springs back when touched.

ポイント

I leave the berries in the freezer until I am ready to mix them into the mixture to minimise the berry colour running through the mixture. Any fresh berries could easily be substituted for frozen if available. We don't like our muffins overly sweet so the sugar content could be increased to ¾ cup if that is your preference.
