Vegetarian Oyster Omelette , a twist to a local Singaporeans favorite breakfast

Ingredients:
1.Sunflower brand sweet potato starch
2. one can straw mushrooms chopped
3. 3 Eggs beaten
4. Parsley for garnishing
5. 3/4 Cup Water
6. 2 tbsp oil

Method:
1. Add 4TBSP sweet potato starch
to 3/4 cup water and mix well
2. Add oil and pour half of mixture into frying pan and immediately add 1 or 2TBSP beaten eggs and handful of chopped straw mushrooms and parsley onto flour mixture
3. Turn and fry till brown and add soy sauce to taste.

4. Cut into small pieces with wok ladle and SERVE HOT 😀
5. Then fry the next batch ☺️

*Takes a few tries to perfect the consistency .. #enjoy
