In the pot, add cooking oil and add black pepper corn, garlic, celery,(←fresh ingredients) cilantro roots, dried spices, dried galangal, dried Shiitake and white onion(←dry ingredients) into the pot and sautée until fragrant. Middle heat.

Add glaciated sugar and sautéed until the sugar turn golden brown.(caramelise)

Add water along with pandan leaf and beef tendon in to the pot using high heat.

Add other ingredients (soy sauce, rock sugar, seasoning soy sauce, salt and oyster sauce).

Turn the heat down to low and simmer until the beef is tender soft and transfer to a hot pot and garnish with sliced green onion, celery and fried garlic.
